Catfish with Mango Salsa

Mango Salsa:

2 small ripe mangoes, chopped
1 tbsp grated orange rind
½ cup (total) chopped red, green, and yellow pepper
1 tsp grated fresh ginger
1 tbsp chopped fresh cilantro
Juice of 3 lemons

Fish:

2 – 6 oz. catfish fillets

1 tsp hot pepper (your choice)

1 tsp seasoned salt

1 tsp lemon pepper

2 tbsp olive oil

Directions:

  1. Mix all of the salsa ingredients and let marinate for 4 hours in refrigerator
  2. Rub the fish with the spices and the oil;  let marinate for 30 minutes
  3. Sauté the fish in a thin layer of olive oil for 4 – 8 minutes on each side.  Serve with mango salsa on top.
